Menudo, otherwise known as mole de panza, is a traditional Mexican soup. The main ingredient is beef tripe, which is the meat harvested from a cow’s stomach. Upon hearing this, people might be hesitant to try this lovely dish. But trust us, it is better than it sounds. This hearty soup is slow cooked in a rich broth made with a spicy chilli paste and fragrant herbs such as oregano and rosemary. It may seem a little out of one’s comfort zone but the meat is selected for its top quality and its nutrition. When cooked just right, it is perfect for a cold rainy day alongside a glass of iced lemon tea or even a steaming cup of sweet teh to compliment the spice.

Cabrito

If you love Satay, Char Siew and various other roasted meats, you will love this next dish. Cabrito is the roasted, and sometimes stewed, meat of a young goat. This delicacy hails from Monterrey, Mexico and is a specialty of this region. There are numerous variations in the recipes of Cabrito. You have Cabrito al pastor, where the meat is slow roasted on a spit without seasonings.  Cabrito al horno is roasted in an oven and Cabrito en salsa is cooked is a beautiful sauce filled with tomatoes, garlic and of course, chilli. Pambazo

This is a delicacy for all the sandwich lovers out there. If you are looking for sandwich stuffed to the brim with potatoes and chorizo, drenched in a savoury sauce, you need a Pambazo in your hands. In plain words, Pambazo is a Mexican salsa drenched sandwich. What makes it so unique is the bread itself. The Pambazo bread is a white crust-less bread that is softer than regular white bread to allow it to retain its shape when it is dunked in the spicy sauce. While the bread is delicious in itself, it is the sauce that elevates it. The warm sauce is made with the guajillo red pepper, guaranteed to give you the spicy kick you crave.

Ceviche

If you enjoy sushi and sashimi, Ceviche is the dish for you. Similar to menudo, this dish may seem out of your comfort zone. But give this unique dish a chance and let it tantalize your taste buds. Ceviche is fresh raw fish, usually lean white fish such as yellowtail or White Sea bass, cubed and marinated with vinegar and citrus juices, seasoned with sliced onion, fresh mint, coriander and olive oil. Tamales

Although not commonly ordered by Singaporeans, Tamales is a household staple in Mexican cuisine. Tamales are a mixture of corn dough, also know traditionally as Masa, and a savoury meat filling.  The slow cooked meat, usually chicken or pork is seasoned with chilli powder, garlic powder and ground cumin, smothered with vegetables such as potatoes, carrots and corn. The mixture is then shaped within the masa dough, wrapped and steamed in a corn husk.  “Best Tacos in Singapore, easily. Authentic food, little pockets of deliciousness makes you crave for more. Try the Baja Fish Taco and the Vegetarian Quesadilla slathered with Naga Ghost Pepper hot sauce. Absolutely to die for.

Chef Stan is also one of the loveliest people you’ll ever meet. Always ready with a friendly smile and some interesting facts about his food.

“Had placed order for 15 dishes (enchiladas, burritos, tacos, quesadillas) plus guacamole n salsa. Ms Lim is always very patient n polite to attend to all my enquiries promptly.

The food delivered is fresh n the burritos are hot! The meat is flavourful n tender. 2 bottles of hot sauce were provided on the house. The portions given are generous n the prices are reasonable. Overall, my whole family is very satisfied with today’s meal. A big thumb up for Ms Lim n her staff.”
