Overview of Indian Restaurants
It is rather common for Indian restaurants to present their local dishes as part of a nationalised cuisine. These Indian cuisines are strongly influenced by India’s rich history which consists of their religious and cultural practices. In fact, learning a little background information about the common cultural practices and history of cuisines or dishes in India transform your next Indian meal trip into a remarkable, interesting and deeply meaningful adventure.
Typical Indian Restaurants’ Cuisines
Most Indian restaurants’ local cuisines (depends on whether the restaurant serves vegetarian meals or not) consist of rice, Chapati (flatbread), meat, vegetable, soup, salad, yogurt, spices and pickles. In general, water will be served with every dish. Local customers can also request for a glass of wine or alcoholic drinks.
Although Indian restaurants’ cuisines are rather diverse, there are certain commonalities that bond and unite their different culinary practices. In any countries that serve Indian cuisines, they are highly reliant on curries and spices, which carry heavy gravy-like sauce or stew-like dishes with meat, vegetables, soup or even cheese. The particular spice mixtures, level of liquidity and selection of ingredients differ according to different chefs in the countries – they are usually cooked based on regional preference. Indian cuisines in general are also very dependent on rice. In fact, the Southern Indian regions consume more rice than other areas.
Moreover, all their cuisines are dependent on “pulses” or legumes – they use a greater variety of pulses than any other global cuisines. These include red lentils, Bengal gram, pigeon peas or yellow gram, black gram and green gram in a wide number of Indian dishes. The “pulses” or legumes help to add favour and creaminess to dishes that don’t use dairy. In other circumstances, they add certain protein to vegetarian diets for better favouring.
In short, the most interesting characteristic of Indian cuisines is its diverse use of spices. Indian cuisines often use up to five different spices, sometimes using ten or more. These strong spices consist of chilli pepper, black mustard seed, cumin, tumeric, fenugreek, ginger, garlic, cardamom, cloves, coriander, cinnamon, nutmeg, saffron, rose petal essence, garam masala and asafoetida powder. These spices are very strong in favour and scent when raw but injects a delightful taste when added to cooked dishes. These additional spices are added according to different regions and personal recipes. Mint, coriander, and fenugreek leaves are often provided to add their pungent herby flavours to all dishes in India.
History of Indian Restaurants’ Cuisines
The history of Indian restaurants’ cuisines are inspired by the cultural impact of trade in specific regions; bearing the mark of foreign influence. India’s cuisines (such as spices) were highly influenced by Arab and European traders. India received many goods that greatly influenced its culinary tradition. Portuguese traders produced imports such as tomatoes, potatoes, and chillies, which have become hugely integrated into Indian cuisines. Arab traders also brought foreign influence such as coffee and asafoetida powder.
India’s conquest periods have also greatly shaped the development of its cuisines. For instance, Mughal conquerors, who occupied India between the early 1500s and late 1600s, deeply integrated India’s culinary practices with Persian flavours. The culinary practices involved the use of cream and butter in sauces, as well as meat and nuts in specific dishes such as biryanis, samosas, and pulaos. These dishes were draw influenced by Persian cuisines.

The menu improved are very well spread and there are a lot of vegetarian options. The Ford feels very authentic. The only problem being the place is too heavy on the wallet. I guess the good quality it’s good but not that great that the price punt be placed at its current position. All in all I must say it’s worth the visit definitely once. That said – Really tasty Indian food tucked away in Raffles City where the aroma hits you before you enter the restaurant and gets you salivating. What Do Indian Restaurants Sell in Singapore?

- Pickles
Pickles are general side dishes or also known as mixed vegetables. They are also served by Chinese and Malays in their traditional food.
- Nasi biryani

- Roti Prata
Also known as flat bread, it is made of flour added with other unique ingredients to add favours such as eggs, durian, cheese, Nutella chocolate, strawberry sauce, sugar, onions, curry and so on. This is also like ‘Singapore’s croissant’ and a popular supper after leaving nightclubs.
- Indian Mee goreng
Indian Mee goreng is made with yellow noodles, prepared ‘Indian style’ and fried with spices, minced meat, green peas and potatoes.
- Murtabak
This is served like a Roti Prata added with minced chicken, mutton, beef or sardines.
- Roti john
A split, panfried baguette topped with egg, minced mutton (lamb) and onions, and served with tomato ketchup.
- Teh tarik
Literally known as ‘pulled tea’, it is named after its preparation technique. The tea is poured from two cups, using a pulling technique from great heights.
In fact, there are so many other Indian foods in Singapore that are less widely available foods, but which can still be found in several areas serving a more specifically Indian cuisines, such as Little India or Geylang.
